Birthday Chocolate Cupcakes

My new boss is having a birthday!  

1/2 cup cocoa

  • 1 cup boiling water
  • 1 1/3 cup plain flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 120g butter
  • 1 cup white sugar
  • 2 large eggs
  • 2 tsp vanilla extract

Method

1. Add cocoa and boiling water, stir until smooth
2. Beat the butter and sugar until light and fluffy
3. Add eggs, one at a time, beat until smooth
4. Add vanilla, flour, baking powder and salt, beat until incorporated
7. Stir in cocoa mixture
8. Beat until combined
9. Add to cupcake liners
10. Cook 15-20 min or until skewer comes out clean

5 minute chocolate cake

Sorry for my extended absence!  Moving is a lengthy process!

Nothing beats a warm chocolate-y cake on a chilly Sunday evening!  But when you don’t feel like a full on baking session and the only chocolate you have in the house is in powder form…what do you do?

{Beware:- This the most dangerous cake recipe in the world. You are now only 5 minutes away from chocolate cake at any time of the day or night!}

Whip out:

  • 4 tablespoons self-raising flour
  • 4 tablespoons sugar
  • 2 tablespoons cocoa
  • 1 egg
  • 3 tablespoons water
  • 3 tablespoons oil
  • 3 tablespoons chocolate chips (optional)
  • A small splash of vanilla extract
  • 1 large coffee mug

Then you:

  1. Add dry ingredients to bowl, and mix well. 
  2. Add the egg and mix thoroughly.
  3. Pour in the water and oil and mix well.
  4. Add the chocolate chips (if using) and vanilla extract, and mix again.
  5. Spoon mixture into two mugs, or three medium size ramekins, filling a little over halfway/up to three quarters full.  {I filled my ramekins just under 3/4 full}

Put your mug in the microwave and cook for 3 minutes at 1000 watts (high). 

Spoon on some icing;

  1. Mix some soft icing sugar (about 1 cup) and cocoa (1tsp-1tbsp) - add water as you mix until it has reached the desired consistency.

 and EAT! 

NOTE: 

  • This recipe serves three people.
  • It will rise over the top of the mug/ramekin - do NOT be alarmed - it will not overflow.  It will sink down to the perfect level! {That is icing running down the sides}

This is about the third time I have personally made these, and they only get more and more delicious! I have never used chocolate chips, but tonight was the first time I added icing.  If you are going to make these, it is definitely worth whipping up some basic icing to soften the chocolatey-ness of these little monsters. 

Needless to say, they were devoured!
